Music for Initiation Rites

I would be interested in hearing what music your parish uses if you have RCIA at the Easter Vigil, specifically to the blessing of water, baptismal acclamations and during confirmation.

I would also welcome suggestions from those on, for want of a better word, the "serious" side of the serious-classical/pop-folk liturgical music divide.
